COLLINE SALUZZESI PELAVERGA DOC
VINEYARD: Steep hillside vineyard exposed to full south. 35 year old vines, controspalliera training system. The soil is a mix of schist and weathered mountain sandstone. 100% Pelaverga / Saluzzo clone.
WINEMAKING: Grapes are 100% handpicked at the end of October and fermented into red wine in stainless steel vats at controlled temperature with ambient yeasts; maceration on the skins last for 1 week. The wine ages for 10 months in Slavonia oak casks (20 Hl.) prior to decanting, bottling and release on the market.
