VINEYARD: 10 Ha in Orvieto, at 300 mt altitude. 22 year old vines, 5.000 plants x Ha., the topsoil is composed of red clay rich in iron, over a block of volcanic chalk [Tufo]. 40% Grechetto, 30% Trebbiano and 30% Malvasia.

WINEMAKING: Grapes are handpicked around the end of October and fermented into white wine in stainless steel vats at controlled temperature with ambient yeasts; The wine ages for 5 months on its lees in stainless steel vats at controlled temperature, to prevent malolactic fermentation.

Grechetto, Procanico and Trebbiano grapes are hand-picked the first week of September and fermented at controlled temperature into stainless steel tanks with selected yeasts. The wine ages in stainless steel vats for 6 months on its lees prior to bottling and commercial release.
