VERNACCIA DI SAN GIMIGNANO DOCG

VINEYARD: 6 Ha in San Gimignano, at 300 mt altitude. 25 year old vines, 4.500 plants x Ha., the topsoil is composed of yellow sand rich in silica, over a block of volcanic chalk [Tufo]. 100% Vernaccia.
WINEMAKING: Grapes are handpicked around the end of September and fermented into white wine in stainless steel vats at controlled temperature with ambient yeasts; The wine ages for 5 months on its lees in neutral oak to complete malolactic fermentation. It is then racked into stainless steel vats where it decants prior to bottling and commercial release.

Vernaccia grapes are hand-picked during the first ten days of October, destemmed and crushed into a pneumatic press. The resulting must is fermented into stainless steel vats at controlled temperature, and matured on the lees in stainless steel vats up until the month of March following the harvest. |
