VINEYARD: 80 to 130 year old bushvines [Alberello] in Trecastagni, ‘Gurna’ and ‘Ilice’ vineyards, dry farmed and hand-pruned. 6.000 vines x Ha. Loose, volcanic sandy soil rich in iron, sulphur and manganese. 60% Carricante, 40% Cataratto and Minnella.

WINEMAKING: Grapes are handpicked at the end of October and fermented into white wine in stainless steel vats at controlled temperature with ambient yeasts. The wine ages for 8 months on its lees in stainless steel tanks to complete malolactic fermentation, prior to bottling and release.
